Nailed It!

You know those posts…the cute idea from the web shown along side the DIY version as “Nailed It!”

They always crack me up.

I completely understand how this happens because when my kids were little I made them birthday cakes. They tasted good but belonged on the cover of National Lampoon, not Better Homes and Gardens.

The most memorable of the Lampoon Cakes was “The Great Wasatch Fault Cake” which developed a crack in the frosting then progressed to a full-fledged chasmĀ as we were singing “Happy Birthday”.

It was stunning.

Anyway, I was rummaging in my cupboard the other day and found a recipe for zucchini brownies. I had a zucchini, I had the other ingredients, I had time.

What could go wrong?

Right?

Yes, I added some cinnamon and a little protein powder but it didn’t seem to change the texture of the batter so I had high hopes.

Nailed it!

They tasted good but were more like lava cake. Or something.

Very gooey.

I think a spoonful in a dish with some good vanilla ice cream would be perfect. To that end, I put them (it?) into a freezer container to portion out at some future date.

Maybe to celebrate the end of lockdown. Or that it is a day ending in “Y”.

Dunno.

In defense of the recipe (which I will make again) I am pretty sure that the pan I used was too small. They need to be quite thin as they are truly fudgy. The recipe wasn’t kidding about that.

The cinnamon was a nice touch. And I will add the collagen peptides again.

Altitude may also have played a part in the outcome. I am going to say it did, but I think the biggest thing I did wrong was the pan size.

So…in this time of having time to do stuff we maybe wouldn’t ordinarily do, do you have a “Nailed It!” story?

I would love to see pictures because laughter is the best medicine.

That, and washing your hands before and after you touch your face.
